A: Mango Chicken Serves 4 4 boneless, skinless chicken breasts 3 C orange juice 2 mangos, peeled and sliced 2 T honey 1 tsp. grated fresh ginger Grill chicken till nicely browned. While chicken is grilling, mix orange juice, honey and ginger. When chicken is about 3/4 cooked, remove from grill and place in a large skillet. Add orange juice mixture and cook until liquid reduces and chicken completes cooking, about 10 minutes. Add mango slices just before removing from heat, so they warm, but not cook. Serve over rice or couscous. Spicy Tropical Chicken Serves 4 1/4 C lime juice 1/2 C pineapple juice 2 -3 tablespoons minced jalapeno peppers 2 cloves garlic, minced 1/4 C minced shallots 1/4 C light soy sauce 2 lbs. boneless chicken tenders Combine all ingredients except chicken to create a marinade. Put the chicken in a large plastic zipper food storage bag and pour the marinade over the chicken. Let marinate in the refrigerator for at 2-6 hours, turning occasionally. Drain chicken and discard marinade. Grill, broil or saute the chicken as desired until fully cooked, about 10 minutes. Florida red snapper Serving Size : 6 2 Pounds Red snapper -- fillets 1/4 Cup Grated onion 2 Tablespoons Orange juice 2 Tablespoons Lemon juice 2 Teaspoons Grated orange rind 1/2 Teaspoon Salt 1/8 Teaspoon Nutmeg Thaw fillets if frozen. Cut fish into 6 portions. Place in a single layer, skin side down, in a well-greased baking dish, 12x8x2 inches. Combine onion, orange and lemon juice, orange rind, and salt. Pour over fish; cover and place in refrigerator to marinate 30 minutes. Sprinkle fish with nutmeg and pepper. Bake in a moderate oven, 350F, for 25 to 30 minutes or until fish flakes easily when tested with fork. "Grilled" Glazed Tuna Steaks Serving Size : 4 1/3 cup Dry Sherry 1 tablespoon Ginger Root -- minced 1 tablespoon Low Sodium Soy Sauce 1 teaspoon Honey 2/3 tablespoon Garlic -- minced 1 pound Tuna Steak -- cut in 4 pieces Combine Sherry, Gingerroot, Soy Sauce, Honey & Garlic in A 1 Cup Glass Measure. Microwave Uncovered At High 1 Min. OR Until Mixture Boils. Cool Slightly. Place Tuna in An 11 X 7 X 1 1/2 in. Baking Dish. Pour Marinade Over tuna. Cover & Chill 2 Hours. In a large pot over medium heat, combine corn, chili beans, broth and salsa. Bring to a boil, then reduce heat and stir in cooked turkey. Season with salt and pepper. Cover, and cook 5 to 10 minutes more, until heated through. Stir in cilantro. 2. In a bowl, stir together sour cream and guacamole until smooth. 3. Q: Can anyone recommend any Yeast-Free Diet recipes or meal/snack ideas? Or tips on how to stay on track?
My wife has just gone onto a Yeast-Free diet and is struggling as she has a sweet tooth and is missing the suger and especially the chocolate. She has been suffering headaches, tiredness and mood swings. Can anyone offer tips on what she can do to stay on track or even any foods she can eat a little to treat herself? Recipes or ideas for snacks in particular - and also breakfasts, lunches and dinners - would be helpful. Anything you can offer would be appreciated.

A: Wow, this is a very challenging diet. I went on it after I had my first child. The best thing to do is focus on what you CAN eat. DIET SUPER CHICKEN 4 whole chicken breasts, skinned and cut in half 1/2 tsp. salt 1/4 tsp. pepper 1/4 tsp. garlic powder 1/2 c. diet apricot preserves 1/2 c. low cal French dressing 2 tsp. diet apple jelly 1 tsp. dry chicken bouillon Place chicken in a foil lined pan. Combine salt, pepper, garlic powder and sprinkle on chicken. Combine and brush remaining ingredients all over chicken. Bake at 350 degrees F. for 1 hour. DIET RICE 1 c. plain brown rice 1 c. diced celery 1 c. diced carrots 1 sm. onion 1/2 c. pecans 1 sm. can chunked pineapple 1 c. raisins Cook rice according to directions on bag. Saute celery and carrots in pineapple juice for 10 minutes. Low heat, add onion and saute another 5 minutes. Remove from heat, add pineapple, raisins and nuts. Drain any liquid then add to cooked rice. Use soy sauce if desired. Serve as a side dish or use as a diet snack. (Can reheat in microwave.) BAKED DEVILED TOMATOES (DIET) 4 lg. tomatoes, halved Salt 1 tbsp. prepared mustard 2 tbsp. chopped green pepper 2 tbsp. chopped celery 1 tbsp. chopped green onion 2 tbsp. butter, melted Place tomatoes, cut side up, in baking dish. Sprinkle with salt. Spread with mustard. Combine green pepper, celery, onion and melted shortening. Spoon over tomatoes. Bake at 425 degrees for 8-10 minutes. Makes 8 servings, 51 calories per serving.

Q: Help with diet/recipes that contain little to no meat?
I was raised in a meat-loving family so I never was used to eating salads, nor do I know how to make vegetarian meals. Now I have a medical condition that requires me to lay off red meat completely, and to have very minimal white meat. I'm allowed to have some free range fish and eggs, but the diet is supposed to be based on vegies, lentils, chick peas, and such. Please share some of your vegetarian recipes or links to help me out. A: Amy's Soy Mac-n-cheese, add Soy Knox or Smart Dogs. Amy's Indian food or Trader Joe's Indian Food (Dal) with rice. Veat 'Salmon' (pan fry in olive oil, garlic powder and capers or lemon juice) serve with rice and a salad. Hummus, pita bread and a salad. Gardenburger Breakfast Bacon - make a BLT add avacado. Slice tomatoes in rounds, top with Soya Kaas mozzarella cheese, basil, cut up figs (peeled, washed in hot water to bring out the sweetness) sprinkle with a little olive oil and balsamic vinegar. Leave out to room temp until cheese is 'melted' looking. Stir-fry veggies and rice with Tofu - I use extra firm, wrap in paper towels to soak up the excess water. Cut in slices, fry in a little olive oil, hot pepper sesame oil and soy sauce. Sprinkle with ginger, garlic, curry, whatever you have in the cupboard. Top with sesame seeds. You can also top it with sliced veggie cheese and serve on toasted sourdough with mustard. Gardenburger Riblets, baked potato, broccoli (w/ lemon, margarine and garlic) and a salad. Pasta w/ marinara sauce, if you have Boca Itailan Sausages cut them up and add it to the sauce. Serve with garlic bread - spread butter on bread, sprinkle with garlic powder and brown in a pan, butter side down. Clean portobello mushrooms, cut up, saute in olive oil, garlic and a little soy sauce. Serve with salad. MorningStar Farms Sausages (not the breakfast ones) are good on homemade pizza - add mushrooms, tomatoes, broccoli, peppers, onions, soy cheese. Easy Corn Chowder Soup – 1 can each of White Corn, Yellow Corn and Creamed Corn, including the water from the can. Cut up celery add to the pot, add a little rice dream milk. To vegetarian refried beans add mild green sauce. Add soy cheese if desired. Make Spanish Rice – Far East and/or Rice-a-Roni makes it in a box, just add tomatoes. Serve in a burrito, taco or tostada – add lettuce, tomatoes, soy cheese and avacado to the top. Quorn turkey roast, with mashed potatoes and a vegetable. Use leftovers on for a 'turkey' sandwich or in soup - Vegetarian Chicken Noodle Soup 6 cups of pure water ¾ cup Vegetarian Chicken Soup Base 6 organic celery stalks, chopped 1 ½ cups sweet onion 6 carrots, chopped finely 1 package organic noodles (rice, corn or barley) 1 package of Quorn Tenders (or use leftover Quorn Turkey Roast cut up) Sauté Tenders lightly in olive oil. Heat water, add soup base, stirring gently. Add vegetables, noodles (consider breaking them into 1-2 inch pieces) and Quorn Tenders. Basil, Tomato and Mozzarella Sandwich INGREDIENTS 1 (1 pound) loaf Italian bread 6 fresh basil leaves, chopped 2 tomatoes, sliced 4 ounces fresh mozzarella cheese, sliced (Soya Kaas) 1/8 teaspoon red pepper flakes 1/2 cup balsamic vinegar DIRECTIONS Slice the loaf of bread in half lengthwise. Layer the basil, tomato slices, and mozzarella cheese between the two halves of bread. Cut into four sandwiches. In a small dish, stir together the balsamic vinegar and red pepper flakes. Use as a dipping sauce.

Q: What are some good diet recipes to make, I love chili so any diet chili to make? (with meat)?
I'm looking for some recipes that can help me lose, but a recipe that will give me a few leftovers.For example when I made the chicken soup, I had 26 cups, enough for a while to last me, so I want recipes to last me, since I don't have a whole lot to spend on dieting all the time.

A: Depending how how low cal you want to make this, I can make it really low cal and very good, but it takes a bit of work. Spray a non stick sautee pan with a bit of Pam. Then add diced 1 yellow onion, 2 cloves of garlic and half a pepper. Cook for about two minutes then add about 1/4 c. chicken stock, 1 finely diced chipotle pepper in adobo with about 1 tsp. of the sauce, and about 1 tbsp. each salt, pepper, chili powder and cumin. Let this cook on a light simmer until the liquid is almost gone. Then add about 1 lb. ground turkey breast. Sautee this up until almost done. Then add 2 large cans of diced tomatoes, 1 can of light kidney beans with the liquid and 1 can of dark kidney beans without the liquid. Mix in 1 tbsp each salt, pepper, chili powder, cumin, and oregano. Also 2 tbsp. of seasoning salt. Let it simmer on low for about 1 1/2 hours. It freezes really well. I do this all the time. Made it for superbowl and I thought I was going to have leftovers, but nothing.

i have a 4 month old bull terrier and she has bad allergies and her coat is starting to fall so i wana try the raw diet i been researching and wana make a change for her, can any one help me out with some good recipes thz.

A: There is no need for recipes - just approximate ratios!! aim to feed about 70-80% raw meat, 10-15% bones and 10-15% organ. This is not as complicated as it sounds as these amounts are fed over a week or two not every day. Feed your pup about 2-3% of his projected adult weight from a wide variety of protein sources. My dogs and cats eat chicken, beef, lamb, pork, fish, eggs and kangaroo. I currently have a 4.5 month old SBT pup and she and the rest of her litter were weaned straight onto this diet. Today she had a chicken drumstick for breakfast and will be having kangaroo mince and lamb heart for dinner. Start slowly with bone in chicken breast or quarters for a few weeks and then add one new thing once or twice a week once you know she is not reacting to anything.

I'm going on the Atkins diet soon and I've been looking at what I can and can't eat. The price of food is going up in the UK anyway but if you're eating lots of protein it's going to be even more expensive. Can anyone suggest cheap protein or cheap recipes please? Many thanks

A: The incredible edible egg is always a good choice. Chicken thighs are better than breasts. Buy in bulk if you can. Here is a wonderful low carb recipe site. Very few odd ingredients found here. Most recipes are done with whole foods found in any grocery store.

A: Low Fat Tuna Steak Bring something new to the table! White wine and dried basil bring a distinctly Sicilian taste to these luscious yet low-fat tuna steaks. START TO FINISH: 45 minutes MAKES: 4 servings 1pound fresh or frozen tuna steaks, 1 inch thick 1small onion, chopped 2cloves garlic, minced (1 teaspoon minced) 1tablespoon extra-virgin olive oil 2pounds roma tomatoes, seeded and chopped 1/2cup dry white wine 1/4to 1/2 teaspoon crushed red pepper 1/4cup pitted ripe olives 2tablespoons capers, rinsed and drained 2tablespoons chopped fresh basil or 2 teaspoons dried basil, crushed 1tablespoon chopped fresh mint or 1 teaspoon dried mint, crushed 1/4teaspoon kosher salt 1/8teaspoon freshly ground black pepper 1tablespoon lemon juice Thaw tuna, if frozen. Cut tuna into 4 portions, if necessary. Rinse tuna; pat dry with paper towels. Set aside. In a large skillet, cook onion and garlic in hot oil over medium heat until onion is tender. Add tomatoes, wine, and crushed red pepper. Bring to boil; reduce heat. Simmer, uncovered, for 7 minutes. Add olives, capers, and dried basil and mint, if using; cook for 3 minutes more. Sprinkle tuna with kosher salt and black pepper. Add tuna to skillet on top of tomato mixture. Cover and cook over medium heat for 5 minutes. Uncover and cook for 10 to 15 minutes more or until tuna flakes easily when tested with a fork and is slightly pink in the center. Transfer tuna pieces to 4 serving plates. Spoon tomato mixture over tuna. Sprinkle with fresh basil and mint, if using. Drizzle with lemon juice. For this recipe you will need: 2 pounds of salmon filets, ¾ cup of low or non-fat sour cream, 1/3 cup of low or non-fat mayonnaise, 2 tablespoons of all purpose flour, 2 tablespoons of lemon juice, 8 ounces of low or non-fat cream cheese, 1 minced clove of garlic, 1/3 cup of your favorite white wine, salt, pepper, and paprika to taste. Pre-heat your oven to 400 degrees Fahrenheit. Wash the salmon and pat it dry with a paper towel. Use a non-stick spray such as Pam and spray your 9x13 inch baking dish. Place the salmon filets in the baking dish with the skin down in a single layer. In a medium size bowl, blend together the sour cream, mayonnaise, flour, lemon juice, cream cheese, garlic, and wine until smooth and well blended. Now, with the back of a spoon spread the mixture over the salmon. Sprinkle with the salt, pepper and paprika to your liking. Do not cover and bake for around 20. You can use a meat thermometer to ensure your salmon is done and not overcooked. The internal temperature should be 140 degrees Fahrenheit. The salmon will still cook once you remove it from the heat source. Do not go by color alone. You can also prepare low fat salmon recipes on your grill or barbeque and create some wonderful low fat sauces to enhance the flavor of your salmon. A great sauce to serve along side grilled salmon is a low fat lemon dill sauce. For this sauce you will need: 2 tablespoons of non-fat mayonnaise, 2 tablespoons of lemon juice, 1 teaspoon of Dijon mustard, ¾ teaspoon of dill weed, salt and pepper to taste. Blend together all ingredients with a wire whisk and refrigerate until ready to serve. LOW FAT AND EGGLESS CHOCOLATE CAKE 3 c. flour 2 c. sugar 1 tsp. salt 2 tsp. baking soda 3/4 c. oil 1/3 c. cocoa 1 tsp. vanilla 2 tsp. vinegar 2 c. water Mix all ingredients together well. Dump into a lightly greased 9 x 13 pan. Bake in 350 degree oven for 35 minutes. The recipe calls for dumping ingredients into a 9 x 13 pan and mixing well with a fork. I like it better mixing well in a bowl then dumping into the pan.

Hi~ I'm looking for some tasty recipes that follow the Weight Watchers points system or are just low cal/low fat. I am especially interested in new versions of old favorites, ie~ low cal mac n cheese, low cal pizza. I also love to bake and would love to make some deserts that I can actually eat! Honey Peanut Granola INGREDIENTS 3 cups quick cooking oats 1/2 cup chopped peanuts 1/4 cup wheat germ 1/3 cup honey 1/3 cup brown sugar 1/4 cup vegetable oil 2 tablespoons warm water 1/2 teaspoon salt 1 teaspoon vanilla extract DIRECTIONS Preheat oven to 250 degrees F (120 degrees C). Lightly grease a baking sheet. In a large bowl, combine oats, peanuts, and wheat germ. In a separate bowl, combine honey, brown sugar, vegetable oil, water, salt, and vanilla. Stir well; then pour into the oat mixture, and stir. Spread out on a cookie sheet. Bake for 1 hour, stirring every 15 minutes. Remove from oven, and cool before serving.
