Q: Vegetarian Recipes?
I'm a vegetarian, and because of my job I can't spend too much time cooking. Where can I find some quick and easy vegetarian recipes?

A: This link hasss a great variety and trust me they are easy to make. I have made quite a few from here. My favorites are the garlic potatoes and spiced lentils from the first site. and cauliflower au gatin and spicy mexican rice on the second site.

I am looking for some good recipes for myself and family to enjoy. I am not very good at cooking vegetarian style. If any body does, post an answer. It may also be helpful to others. A: eggplant lasagna Boil lasagna noodles for 12 minutes, then on the other side boil the eggplant for 25 minutes, remove skin of eggplant then cubed. 2 cups of mushroom & 1 cup of green red bell pepper In a skillet, saute onion and garlic add the eggplant and mushroom ,pepper and a 500 gm can of tomato sauce bring to a boil when boil, pour sauce over lasagna noodles topped with grated cheese and microwave for 10 minutes..total preparation may takes 1 hour --------- Caramelised onion & zucchini lasagne 2 tbs olive oil 3 large onions, finely sliced 2 garlic cloves, crushed 1 kg green zucchini, sliced Salt and pepper 200ml cream 100g parmesan, finely grated 1 tbs chopped dill, finely chopped Fresh lasagne sheets Preheat oven to 170°C. Put 1 tbs olive oil, 3 large onions, finely sliced, and 2 garlic cloves, crushed, in a large frying pan. Cook over a medium heat for 15 mins or until caramelised. Remove from pan. Set aside to cool. Put another 1 tbs olive oil in the same pan. Cook 1 kg sliced green zucchini until golden brown. Season with salt and pepper. Combine 200ml cream, 100g finely grated parmesan and 1 tbs finely chopped dill. Line an ovenproof baking dish with fresh lasagne sheets, trimming to fit. Top with onion, zucchini and one-quarter of the cream mixture. Repeat layers 3 times, finishing with a pasta sheet and cream mixture. Bake for 30 minutes. Serve with steak or roast dinners. ------------ Pumpkin and spinach lasagne 600g (about 2 bunches) English spinach, stems trimmed 1/2 cup thickened cream 350g fresh ricotta cheese 2 egg yolks 150g parmesan cheese, finely grated 250g fresh lasagne pasta sheets 600g butternut pumpkin, deseeded, peeled, cut into 3mm-thick slices 200g mozzarella cheese, thinly sliced Preheat oven to 180°C. Rinse spinach in cold water. Place, with water clinging, in a microwave-safe dish. Cover and microwave on HIGH (100%) for 2 minutes or until wilted. Remove cover. Allow to cool for 5 minutes. Drain. Squeeze to remove excess water. Set spinach aside. Combine cream, ricotta, egg yolks and 1 cup parmesan in a bowl. Season with salt and pepper. Stir until well combined. Grease a 10-cup capacity, 5cm-deep, 16cm x 25cm (base) rectangular baking dish. Cover base with 1 layer pasta sheets, cutting to fit. Top with one-third of the ricotta mixture. Top with half the spinach and half the pumpkin. Repeat layers, finishing with remaining ricotta mixture. Cover with another layer pasta sheets. Top with mozzarella and remaining parmesan. Bake, uncovered, for 50 minutes or until pumpkin is tender. Stand lasagne for 5 minutes. Slice and serve. --------

Lacto-ovo and ovo vegetarians eat eggs. Lacto vegetarians, strict vegetarians, and vegans do not. Your best bet is to go with vegan food. Vegan food is vegan, vegetarian, and omnivore friendly.

Q: What are some good vegetarian recipes with protein?
I've been a vegetarian for about 6 months now, and I just got back from my doctor who told me I'm not taking in enough protein. I don't eat fish, but I do eat dairy products. I really don't like eggs alone, but I'll use them in recipes and stuff. Thanks!

Other good sources of protein are: Grains broccoli corn seeds rice cauliflower Brussels sprouts cabbage A good protein powder to make is to take equal parts of: raw almonds, raw sunflower seeds, flax seeds and raw pumpkin seeds. Grind them into a powder, mix them together and put 1 Tbsp into a smoothie or shake. Also, sprinkle some on anything you eat. Nutritional yeast is good to use, too. Just make sure you eat a varied diet and have protein at each meal. Here are some good examples: Breakfast: Whole grain cereal with rice milk, toast, and a protein shake. Lunch: sandwich with cheese, whole wheat bread, sprouts, tomato, lettuce, onion and avocado. Serve with corn chips . Dinner: Tomato cups stuffed with broccoli served on a bed of qunioa with slivered almonds. Serve with a side of rice and beans and corn bread. Sprinkle a little of the protein powder and nutritional yeast on your rice and beans.

Q: What are some healthy and delicious vegetarian recipes/meals?
I have been vegetarian for a little longer than 6 months and I've actually GAINED a lot of weigh since then. I find it incredibly hard to find/make healthy vegetarian meals that don't cost 5x as much as chicken nuggets and the shopping market. Tips and recipes would be amazingly helpful! :]

Q: Why do people respond to serious requests for vegetarian recipes and stuff with HILARIOUS jokes?
It seems like whenever somebody asks a question around here they get at least one HILARIOUS vegetarian joke. Here's how the average question in the Vegetarian/Vegan section goes: Question: "I'm looking for a good recipe for my vegetarian significant other, any ideas?" Answer: "Vegetarian means bad hunter! LOL!" Just as bad are the people who give recipes for non-vegetarian items. We get the point, people. You don't like vegetarians. How would people like that feel if they asked for a nice pork recipe and we gave them a recipe for vegetarian chili or something? Joe L, I'm sorry. I was in a bad mood today. I totally misread between the lines of your question. What I said WAS rude and immature and I'll try to be less irritable in the future.

A: Edit: PsychoCola, I completely accept your apology. Sometimes I blow my cool a whole lot worse than you did. Recently, greenghost, in answer to one of your questions, bragged about how he single-handedly got my account suspended. I mentioned his name in something I had written, which was completely unoffensive, in defense of what he had said, and what I had written was immediately deleted. It's not much fun participating on a site when you know a bunch of fanatics think they own it and are ready to pounce on you just because they do not like your opinions. I oftentimes disagree with another person's opinion, but I will never tell or force a person to shut up merely for expression of that opinion of which I disagree.

Q: Does anybody have any good vegetarian recipes that are simple?
I recently quit eating meat. I became a Lacto-Ovo Vegetarian, the kind that still eats eggs and dairy products. I really need some good recipes that I could try. Help me out!

A: I too am lacto-ovo who recently converted to vegetarianism. I am loving it! Here are a couple of the best and easiest recipes I have found so far... Spinach and Feta Pasta (super simple) 1 pkg penne pasta olive oil 1/2 c chopped onion 2 cloves garlic 3 c chopped tomato 1 c mushroom 2 c fresh spinach salt and pepper to taste 1 pinch of red pepper flakes 1 4 oz pkg of feta cheese Cook pasta until al dente. Meanwhile, heat 1 tbsp olive oil in a large skillet over med high heat. Add onion and garlic. Cook 5 minutes. Mix in tomato, mushroom and spinach. Season with salt, pepper, and red pepper. Cook 2 more minutes until spinach is wilted. Reduce heat to medium and stir in feta and pasta. Cook a couple more minutes til heated through. This one is of my own creation: Sweet Potato and Black Bean Enchiladas 10 corn tortillas 1 14 oz can black beans 1 14 oz can sweet potatoes 1 yellow onion 2 seeded and diced jalepenos 2 cloves minced garlic 1 tsp each cumin, chile powder, coriander and black pepper 1 shredded carrot 1 can salsa verde or mild enchilada sauce 1 1/2 c jack cheese Mash sweet potatoes in a large bowl with a fork or potato masher. Add 1/2 c jack cheese, spices, jalepenos, carrot, and beans. Saute onion and garlic for 5 minutes then add to sweet potato mixture. Stir all ingredients. Put a little sauce in the bottom of a 9x13" dish. Nuke the corn tortillas for 10 seconds each in microwave so they don't break. Roll up a little of the sweet potato mixture in each tortilla and place seam side down in dish. Pour remaining sauce and cheese over the top and bake in a preheated 375 degree oven for 30 minutes. YUM! I hope I've helped. ENJOY!

Q: What are good vegetarian/vegan Mexican recipes?
I'd prefer to have vegan recipes or vegetarian recipes that you can easily take the dairy out without ruining the meal, but some cheese will be okay as long as there isn't too much. Thanks =)

A: To vegetarian refried beans add mild green sauce. Add soy cheese if desired. Make Spanish Rice – Far East and/or Rice-a-Roni makes it in a box, just add tomatoes. Serve in a burrito, taco or tostada – add lettuce, tomatoes, soy cheese and avacado to the top.

A: You should stock up on carrots. The wholesome goodness carrots provide will work in almost all vegetarian recipes. They also are wonderful for a snack.

Does anyone have any affordable recipes for a vegetarian college student? I'm constantly finding it difficult to make good yet affordable vegetarian food while on a budget.

A: I have tons of them...please email me if you need more!!! VEGETARIAN CHICKPEA PATTIES 2 15-oz cans chickpeas 1 1/2 cups quick oats 3 cloves garlic, minced 1 tablespoon chopped parsley garlic and onion powder, to taste (if desired) pinch freshly ground black pepper 2 to 3 tablespoons vegetable oil salt, to taste Drain the chickpeas and reserve the liquid. In a food processor or blender, process the chickpeas with 1/2 cup reserved liquid. If the puree is dry, add more liquid, a tablespoon at a time, to achieve a smooth, thick paste. Place the chickpea puree in a mixing bowl and add the remaining ingredients except the oil. Mix well, adding additional water or oats as necessary to make a mixture that keeps its shape. Shape into 8 patties. In a heavy skillet, heat oil and fry patties until golden brown on each side, for a total of 20 minutes or so. Thinner patties will cook in less time. VEGETARIAN NACHOS 1 bag Nacho Cheese Doritos 1 cup shredded Colby cheese 1 jar Pace Picante Sauce (chunky) 1 jar jalepenos 2 tbs. sour cream 1 small can black olives Take about 20-25 chips and place onto a microwavable safe plate. Spread 1 cup Colby cheese onto the Doritos. Do not add sour cream until after heated. Heat in the microwave for 30 seconds to 1 minute (depending on microwave). Spread Pace Picante sauce on top of the melted cheese and Doritos. Garnish with 2 heaping tablespoons of sour cream, black olives, and jalepenos. QUICK BROCCOLI VEGETARIAN ENTREE 1 bunch broccoli, cut into sm. flowerettes, trimming woody stock 1 can mushroom soup 6 oz. cooked egg noodles 7 x 9 inch casserole Pam baking dish. Mix together cooked egg noodles, mushroom soup and raw broccoli. Microwave on high approximately 10 minutes. Glorify this with adding fresh mushrooms and cubed chicken-like white meat

A: After School Veggie Pita INGREDIENTS: * 2 cups Mann's Broccoli Cole Slaw * 2/3 cup hummus (Middle Eastern chickpea dip), purchased or homemade * 4 teaspoons jalapenos, fresh and finely chopped * 2 pita breads (6 inches in diameter) * 4 tomato slices, large DIRECTIONS: 1. In a medium bowl, mix together Mann's Broccoli Cole Slaw, hummus, and jalapeno peppers. Using kitchen scissors or a sharp knife, cut pita breads in half. Fill each pita half with 1 or 2 tomato slices and 1/2 cup of the broccoli slaw-hummus mixture. ********* Baked Corn Recipe INGREDIENTS: * 1 (15.25 ounce) can whole kernel corn * 1 (14.75 ounce) can cream-style corn * 1/2 cup sour cream * 1 cup butter or margarine, melted * 2 eggs * 1 (12 ounce) package corn muffin mix DIRECTIONS: 1. Preheat oven to 350 degrees F (175 degrees C). 2. Combine the whole-kernel corn, cream-style corn, sour cream, melted butter or margarine, beaten eggs and corn muffin mix. Mix well and pour into one 9x13 inch baking pan. 3. Bake at 350 degrees F (175 degrees C) for 35 to 45 minutes.

Q: Any good vegetarian recipes - without marinara sauce?
I'm a vegetarian (no seafood, but I do eat dairy and eggs) and I'm looking for some easy recipes because I'm not a very good cook and am tired of eating the same twelve recipes ove and over again. The problem is that I have recently developed an aversion to marinara sauce, and a lot of the recipes I find call for tomato sauce. Any great, innovative suggestions? Thanks!

A: Homemade black bean and brown rice burger. Cook a cup of brown rice, you only need 1 cup cooked, but it makes more, but since it takes so long to cook, save it and have it w. some veggies another day. Take a 15.5 oz can of black beans and drain and rinse them. Them mash them with a fork in a medium bowl. Stir in 1 lightly beaten egg (i only use the egg whites personally) and the rice (one cup cooked) Add about 2-3 tbsp of your favorite salsa and mix together well. Pour about 2 tbsp of olive oil in a skillet and preheat on med. heat. Drop about 1/2 cupfuls of mixture onto skillet usually makes 4-5 and cook for about 5-6 minutes on each side, be careful they're not very sturdy. I like to add some pepper jack cheese on top and let it melt. And then add some taco sauce. VERY TASTY, AND HEALTHY you could add lettuce and tomatoe, or salsa and sour cream..versatile Parmesan Potato Skins Preheat oven to 400 F Depending on how many people will be eating this...Take and lightly scrub some russett potatoes...2 large ones is enough for my fiance and I. Line a cookie sheet with aluminum foil and add some olive oil tilt the pan around so the pan is mostly lightly covered. Slice the potatoes into 1/4 inch thick slices. put them on the pan and add salt and pepper...add a generous amount if you actually want to taste them Toss the potatoes in the oil salt & pepper on the pan so they are all evenly covered, you may need to add a little more olive oil. Top it with some Parmesan cheese, be generous on each slice of potato. Put it in the oven and cook for about 25 minutes, they should be light-golden brown. It's not as complicated as it sounds, they are delicious, and a healthier alternative to french fries. Ask your mom to buy Morning Star "Crumbles" They are very similar to ground beef, just no meat! You can use them in pretty much all of the same meat recipes: tacos, chili, sloppy joes, goulash, lasagna. They taste better than actual meat!!
